potato starch

What it is

Nearly pure starch washed out of crushed potatoes: no fiber, no protein, no potassium — just the polysaccharide. In extrusion it gelatinizes readily, puffing kibble and binding shapes; "modified potato starch" is the same material tweaked for texture stability.

Why it's in pet food

Function over nutrition: expansion, binding, and crunch. It's also among the emptier calories on a label — which is precisely why several potato fractions stacked high on one list deserve the skepticism the splitting rule encodes.
